To prepare the fresh curd with toasted heat the milk up to 90° C, then remove from heat and add the juice of half a lemon and a pinch of salt. Let rest for 30 minutes, then turn over the curds obtained in a colander lined with a thin towel and let it drain until they have reached room temperature.
